Chicken Tortilla Soup


-1 box of Chicken Broth (preferably organic)

-1 medium onion

-4-6 Chicken breasts

-1 jar of Salsa

-1 bunch of Cilantro chopped

-1 cup of Tortilla strips (or Tortilla Chips broken up)

-Optional- Feta cheese as a the topper


-Put the chicken broth and cut up the onion in a large stock pot.  Put in the chicken and water to cover up  the chicken so it is completely covered.  Boil for approximately 30-45 minutes if it is out of the refrigerator and chicken is starting to fall apart.  Cut up the chicken and put it back in the pot.  Add the salsa and chopped cilantro back in the pot for another 15-20 minutes.  Stir in the tortilla strips.  Ready to serve with a little feta cheese and tortilla strips on top for garnish.
